Merula is a delicious extra virgin olive oil with hints of green apple and tomato, with a bit of spice. It has a buttery feel that fills the mouth, as well as distinctive notes of green olives, cut grass, green almond. There are several olives used for this oil. Arbequina, Hajiblanca, Picual, and Marisca The Marisca is a rare olive only grown in Extremadura, Spain, which gives the oil its unique identity. Also, making this a local product a local and family run business. We like that! The name Merula comes from the Latin word for yellow-beaked black bird, a bird that populates the Alvarez de Toledo family estate that harvests the olives.
